Refined birch sap from Småland

Get ready for a new taste experience with refined birch sap. Ängabackens Björksoda is a small-scale, artisanal non-alcoholic drink made from pure birch sap, produced at the farm Sonarp, 20 minutes south of Jönköping. Here, you can experience the production, book tastings, and shop at the farm shop.
The tradition of tapping birch sap is very old in Sweden. The knowledge of fermenting birch sap into a sparkling, fresh non-alcoholic drink comes from Eastern Europe.
Tapping birch sap has always been a way for humans to harvest the first crop of the year from nature.
Birch sap was traditionally drunk in the spring as it was considered a very important source of vitamins and minerals. So, even though Ängabackens Björksoda is a new product for Sweden, the drink itself is ancient.
Ängabacken is the name of a beautiful pasture located east of the barn on the farm in Sonarp. Here grow all the birch trees used in the production. Early in the spring, when the frost has just left the ground, the sap rises in the birch trees. The sap is then slowly tapped, drop by drop, from the birch trees.
The sap is collected in bags that are emptied every morning for further transport to a tank on the farm. The sap is then fermented twice, once in the tank and once in the bottle. The fermentation inside the bottle makes the sap naturally sparkling.
After this, it is time for storage in a root cellar for at least a year. The result is a non-alcoholic, dry, softly sparkling drink. With its freshness and genuine taste, birch soda is perfect for meals, as a welcome drink, and can also be used in exclusive cocktails.
The farm shop is open from Wednesday to Sunday. Here, you can taste the different vintages and buy both Birch Soda and other products from the farm.
In the spring, there are opportunities to participate in various sap-tapping events. Year-round, group bookings for up to about 25 people are offered. The experience is adapted to the changing seasons and includes lunch, dinner, coffee, or other requests.
